My Fav Omelet

This afternoon, I was alone and hungry. The breakfast of bread, pear, and a mug of Horlicks long digested, I decided to cook something.

A raid in the fridge in true blue income tax department style threw up nothing. If my fridge were human, he/she would be a stinking rich but honest taxpayer. A paradox.

Coming back to the main point, I was left with a few eggs and tomatoes and onions with a few sprigs of coriander thrown in. I had some rice in the jar as well.

Butter mixed with hot boiled rice tastes awesome. I boiled some rice and put some peas in it, so they would also be cooked while the rice was boiled. Peas rice is better and more colorful than boring white boiled rice. It’s fancier too.

I was left with the uncooked eggs and some more vegetables. Incidentally, I might mention here that I simply love eggs. Give me eggs in any form, other than the uncooked one, and I will just gobble it up. Am sure there are lots of you out there who will know what I am talking about.

This post is not about boiled rice or peas. It’s about eggs and an omelet.

Serves: 1 or 2 or 3… As many as you want… Sharing is Caring.

Ingredients:

· 2 or 3 eggs

· Tomato: 1 (Chopped)

· Onion: 1 (Chopped)

· Green Chillies: 2 (Chopped)

· Bell Pepper: Green or Red or Yellow: ½ (Chopped)

· Coriander Leaves: 1 or 2 Sprigs (Chopped)

· Salt: To taste

· Oil or butter: 2 teaspoons

Preparation:

Heat the oil or butter in a pan. Add the onions and fry till brown. You can also under-cook the onions. They taste sweet when under-cooked.

Add the tomatoes and the bell pepper after some time. Add the green chillies too. Put in a pinch of salt as that helps the vegetables to cook faster.

Don’t let the vegetables run dry while frying.

Do NOT beat the eggs in a separate utensil. Break them over the pan and let them drop into the pan. Break the yolks and spread them evenly all over the vegetables. Let it cook on a slow flame as the eggs set.

Add salt to taste. Add the coriander leaves once the eggs are almost set.

Your omelet is read to be served and gobbled up!

This is what I made for lunch along with my peas rice this afternoon.

You can eat it with anything or as a snack. I am contemplating adding some more vegetables into the omelet.
